1- Rice stew with lentils
- Ingredients:
- 1 cup of rice.
- 1 cup of lentils.
- 2 medium tomatoes, without skin and without seeds.
- 1 small black potato
- 1 small onion.
- 1 medium carrot.
- Preparation:
- Rinse the lentils with cold water. Place them in a bowl with plenty of hot water and let them soak for 3 hours. Discard the soaking water. Boil them and strain them.
- Boil the rice.
- In a separate saucepan, place a little water and cook the onion, carrot, black potato and tomatoes, previously cut into small cubes.
- When the vegetables are tender, add the rice and lentils, cook everything together for another 5 minutes until everything is well cooked.
2- Chickpeas with meat:
- Ingredients:
- 1/2 cup of minced meat.
- 1 cup of chickpeas.
- 2 medium tomatoes, without skin and without seeds.
- 1 small black potato
- 1 small onion.
- 1 medium carrot.
- Preparation:
- Rinse the chickpeas with cold water. Place them in a bowl with plenty of hot water and let them soak for 3 hours. Discard the soaking water. Boil them and strain them.
- In a separate saucepan, place a little water and cook the onion, carrot, black potato, tomatoes and meat, previously cut into small cubes.
- When the vegetables and meat are tender, add the chickpeas, cook everything together for another 5 minutes until everything is well cooked.
